Our first coffee from Onyx Coffee, we are excited to introduce a Pacamara from Guatemala! This coffee has a bright, key lime acidity balanced with a custard, creamy mouthfeel. Steer towards this coffee if you enjoy pronounced expressions of terroir and acidity.

1:16 Coffee to Water Ratio (or 3Tbs Coffee to 16oz Water)

Grind Coffee medium (7 on EK 43)

Rinse the paper filter, preheat the decanter.

Saturate the coffee, let bloom for 30 seconds.

Pour 50g of water every 15 seconds until desired amount.

Let drain, decant, and enjoy!

Onyx Importers reached out to us in the beginning part of 2018, and after talking with them over the course of a few months, we are convinced that they are the way to go when it comes to Guatemala coffees! They are a highly specialized Importer, with 90% of their work being within Guatemala. This allows them to build lasting and fruitful relationships with the farms their, like the Perez family farm.
