We are excited to announce our first coffee from China! This was all possible because of Torch Coffee, and their Mountain Man project. This coffee has a lot of sugars, due to the unique Yeast Carbonic process, which we bring out in a medium/light roast. The caramelized sugars and wine-like flavor make this a very heavy and juicy coffee, with some plum acidity. If you like natural Ethiopia coffees, definitely give this one a try!

BREWING INSTRUCTIONS

1:16 Coffee to Water Ratio (or 3Tbs Coffee to 16oz Water)

Grind Coffee medium (7 on EK 43)

Rinse the paper filter, preheat the decanter.

Saturate the coffee, let bloom for 30 seconds.

Pour 50g of water every 15 seconds until desired amount.

Let drain, decant, and enjoy!

The total costs associated in purchasing and roasting green coffee become so detailed and specific that it can become unclear. We want to share with you how the specialty coffee community can benefit the farmers we work with. We have included both our total cost (including importing and receiving the coffee at our Roaster) and our shipping cost, in an effort to shed light on that impact.

This is our first coffee produced directly by Torch Coffee. Their Mountain Man program is an internship program in which people learn how to farm and process coffee. This program also allows Torch Coffee to experiment with new processes, and when they work out they can add it to the curriculum! This coffee is not their first experiment, but it’s definitely a good one! From the Orchid Forest Farm, they color sorted the coffee, and did a honey process with medium water activity. Before full dry, they then did a Yeast-Carbonic Maceration process for 5 days. When Johan tried this coffee in Pu’erh, he couldn’t leave without bringing some with him!
